Hey, friends!
Are you praying for your family and friends who have yet to meet Jesus? Waiting and praying for them is hard — of course it is — but it will be so worth it when they come to salvation in Christ! In 2 Peter 3:14-16a, the Apostle Peter teaches that as we long for those we love to come to faith, in the meantime we should be intentional about remaining as sin-free as possible and at peace (2:14). He reminds us that God’s patience in waiting to return is His loving grace for the purpose of the salvation of those we love and we should be grateful for it (2:15). It’s not a wasteful delay. It’s not that He has forgotten. It’s not that He doesn’t hear His children calling out for ultimate deliverance. It’s because He’s long-suffering out of His great love for every single person He individually crafted with care and concern. Soon enough, there will come a Day when there will no longer be time to choose Jesus. It will be too late. Until then, Peter urges believers to wait and consider God’s delay as His desire to offer salvation to all (3:15). So keep praying!
Meanwhile, as we, through the Holy Spirit, are becoming more like Jesus, we have to address our thoughts! The truth is, every single one of believes lies at times— lies that quietly hold us back, keep us isolated, and chip away at the joy and confidence God intends for us. But we don’t have to stay stuck there. We can learn to recognize those lies are from the enemy and, just like Jesus did, replace them with Truth and the power of God’s Word. Keep praying, friends! The Lord has delayed His return because He’s still going after those we are praying for! In the meantime, as Peter says, hang out with Jesus, love Him, listen to the Holy Spirit’s guidance, and do whatever He asks us to do in peace. That’s a sermon all by itself, right?

BLISTERED TOMATO TOASTS WITH WHIPPED FETA
Makes 4 servings | Total time: 40 minutes | Active time: 20 minutes
2 tablespoons avocado oil, plus more for brushing on bread
1 pint cherry or grape tomatoes
2 cloves garlic, minced
1/2-inch piece ginger, minced
1/4 teaspoon cumin seeds, chopped
1/4 teaspoon white granulated sugar
1/4 teaspoon apple cider vinegar
Kosher salt (diamond crystal) and freshly ground black pepper
4 (1-inch thick) slices of good hearty bread, such as sourdough or country loaf
4 ounces feta cheese
6 tablespoons full-fat plain Greek yogurt
1 tablespoon extra-virgin olive oil
1 lemon, cut into wedges
1 jalapeño chili, sliced into thin rounds
- Adjust oven rack to the center of the oven, then set to 425 degrees Fahrenheit.
- In large bowl, toss together 2 tablespoons oil, tomatoes, garlic, ginger, cumin seeds, sugar, apple cider vinegar, 1/2 teaspoon kosher salt, and a few grinds of black pepper. Massage the ingredients into each other.
- Pour onto a parchment or foil-lined baking sheet and roast, shaking every now and then, for 15 to 20 minutes or until tomatoes are wilted. Remove the pan and allow to cool.
- Meanwhile, brush bread with a little oil, and season with salt and pepper. Bake until the bread is turning golden brown in spots, about 5 minutes. Transfer to cutting board.
- Make whipped feta: Blend feta cheese and yogurt in a blender or food processor until smooth. Now add olive oil and blend until incorporated. Taste and adjust seasoning to your palate.
- To serve, first smush down tomatoes so they open up a little. Spoon a little whipped feta on a slice of bread, swooshing it around with the back of a spoon. Then, spoon some roasted tomato on top, followed by a squeeze of lemon. Finish with a couple rounds of sliced jalapeño. Repeat with remaining toasts and serve!
